  9. Oh, I followed the recipe link and that DOES look delish! I’ll have to try making that sometime (although I’ll have to lighten up on the butter and sugar but I bet it still will taste amazing). Yum. I already love sweet potatoes and I know I’ll love this.

    I’ll tell you, you could so easily cut the butter and sugar and never suffer any flavor with this dish. In fact, I’d definitely cut the quantity of the sugar and butter for the topping – I had tons left over. And you can use that lower fat butter stuff or that yoghurt butter stuff, it will work just as well. The coconut and walnuts really make this dish. Yummy!

    Yes, it’s actually a sweet potato souffle, which I made one year. Amazingly delish – and only a few thousand calories per serving. ;)
